January Challenge-Feed a family of 4 for $70 per week

Here is my BIG January Food Challenge!  I will attempt to feed a family of 4 for as close to $10 per day as possible  That's $310 for the month.

I am sure that most of you couponers out there have a stash of high value coupons, free product coupons and store loyalty cards like I do. 

Most of the meat we have is purchased from local farms so I will weigh the meat when I use it and do a rough calculation of the cost.

I just did my first shop and here are some highlights of my savings.  (My total order was 25 items)
Store #1

1 2lt pop (for New Year's Eve on sale 0.99)
1 Lt coffee cream(on sale for $1.99 and used my $1 off coupon)
1 bag frozen green beans(on sale $2.29)
1 large can of natural almonds(on sale $2.99, a great deal) 
1 jar of Marmalade (Clearance 50% off $1.64)

1 Lg bottle 100% fruit juice ($2 coupon)
1 1.6 KG bag of Uncle Ben's brown rice $5.99 (I estimate this bag will make 50 portions)  
1 Bag organic carrots $1.99
1 4 pk Veggie Burger (50%  0ff)
1 10lb bag of onions $3.99 My total order was $36.84 which included my $11 in coupons, 50% discount on the veggie burgers and cashing in my Club Sobey's points for an additional $15 off.

For the week my total shop is $67.93!  


My Meal plan for this week includes Chili with homemade corn bread, Chili mac veggie casserole, Fish and Chips with homemade bean salad, Homemade Pizza with veggies and dip, creamy potato soup with homemade microwave english muffin bread and a big pot of  chicken rice veggie soup.


From my freezer I will need 1 LB of ground beef for the chili(about $2) and 1/2 chicken breast for my chicken veggie rice soup about ($2) So my budget for this week is pretty much on track!

Bluewater Seafood Recipes and Giveaway

A new product made by BlueWater is the Multigrain Tilapia.  I can't wait to try this one out.  I checked last night when I was out grocery shopping and my store didn't stock it yet so I will have to keep an eye out for it!  I love that it is made with premium fish and holds 5-8 full fillets in a handy resealable bag

Great after Christmas sales!

Now that some of the craziness of Christmas and Boxing Day has passed it is time to scoop up some deals!

A lot of stores are having HUGE sales!   Right now is the perfect time to pick up things that you will need for next year like:

-Wrapping paper/tissue/tags/gift bags
-Christmas themed plastic jars with lids for "in a jar" gifts
-Interior/ exterior lights
-Wreaths
-Holiday themed dishware/glasses ect
-Holiday themed paper plates, cups, napkins for next year's party
-Sweaters-most stores have 50% off sales 
-Replacement bulbs for exterior lights
-Holiday scented candles/potpourri
-Amaryllis kits
-Winter wear like boots, coats, hat & gloves 


-Holiday foods- Some are on sale on now and some after Jan 1st. Look for special treats like cheese cakes, cookies, nuts, appetizers, cranberries, shrimp rings, hams and turkeys. All of these items can be frozen until needed. 

We usually have a Special Valentine's dinner for our kids and I like to purchase some of these leftover items/sale items from Christmas to use then.

Right now chocolates are 50% off but will go to about 75% off in the next week or two.  You can pick up some pretty high end chocolates for only a few dollars a box.  Just be sure to check the expiration date on the box.  If your fancy chocolates came pre-wrapped with Christmas themed paper just unwrap it and re-wrap with red tissue.

Candy Cane cheese cake is already decorated in red & white candy canes and you can add some cinnamon heart candies to it and voila!  An instant Valentine's day dessert.

My special Valentine's dinner will consist of pasta with garlic oil, shrimp and a bit of chili flakes made with a marked down shrimp ring, salad and a box of fancy marked down appetizers.

Remember, it pays to think ahead!

An easy dessert sure to please!

If you are a regular reader of my blog you know that I'm usually all about healthy eating.  Today's post is taking a turn to the naughty side.  Today I am talking about cake, rum, sugar and butter.

My most favorite cake in the whole world, rum cake with rum glaze MMmm.  This recipe is very easy and produces the most moist and flavorful cake ever!  I usually make this cake in a bundt pan, not that presentation matters because it gets eaten so quickly.  This year I decided to make mini loaf rum cakes to give as Christmas gifts.

What you'll need for the cake:

  • 1 cup chopped, toasted pecans or walnuts
  • 1  yellow cake mix
  • 1 4-serving size instant vanilla pudding mix
  • 4 eggs
  • 1/2 cup water or milk
  • 1/2 cup vegetable oil
  • 1/2 cup rum*
For the glaze-
  • 1/2 cup butter
  • 1/4 cup water
  • 1 cup sugar
  • 1/2 cup rum*
*I have made this recipe using dark and white rum & they were both delicious so just use whatever you have on hand.
Preheat oven to 325F.
Grease & flour a 12 cup bundt pan(or what ever pan you decide to use)
Sprinkle the nuts on the bottom of the pan
Mix the remaining cake ingredients with a mixer on medium speed for 2 minutes.
Pour cake batter into the prepared pan and bake 1 hour for a bundt.  My little cakes took 28 minutes to bake.
Once baked cool and invert on a serving plate.
Prick the cake and brush repeatedly until all the glaze is soaked into the cake.

For the glaze-
Mix all glaze ingredients in a small pot and boil gently for 5 minutes.  Remove the pot from the heat and stir in rum. (I usually make this in the microwave)

I have tested my mini loaves out and they are delicious.  I must get them out to the neighbours soon before they are gone!

Kashi Cereal Giveaway!

I am pleased to announce I will be giving away a box of this fab new Kashi Honey Sunshine cereal and a box of yummy Kashi cherry dark chocolate bars.

I have been purchasing Kashi cereal for years, Honey almond flax is my usual.  Kashi is one of the few cereals I can eat and feel full.  Honey Sunshine cereal is nice and crunchy with a touch of sweetness.  A 3/4 c portion has only around 100 calories and lots of fibre (6gm)to keep you feeling fuller, longer.  Add a cup of skim milk and it will up the protein to around 10g.  I actually made up a few little bags of this cereal to munch on the go.  It was a great afternoon pick-me-up 100 calorie snack!
 
If you have never tried these bars I highly recommend them!  Last week they were on sale and I had some coupons so it was the perfect time to replenish my stash big time.

Easy, fun and frugal dinner!

My family loves assemble-your-own dinners and tacos are one of our favorites.  It really helps me out because the kids enjoy getting all of the toppings chopped and shredded for me. 

I start out with browning 1 lb of lean ground beef.  Now it's time to raid the fridge.  I find some sliced green olives, green peppers that I froze in the summer ,  a bit of roasted red peppers, some onion and a clove of garlic.  Then I add either salsa($1 coupon for Old El Paso @ save.ca) or my tomatoes I canned from the summer and some cumin and chili powder.  Let it cook for about another 5 minutes and your done!

The kids did a great job of getting all the toppings ready
 Now if you want to stretch this meal out you can do what I did.  I removed 1/2 the meat from the pan and set it aside.  To the pan I added 1/2 can of mashed red kidney beans, 1 cup of cooked brown rice and a bit more salsa.  This filling is great for the kids because the beans and rice tighten it up so the filling won't flop out as easily. 

We had a bit of taco meat left over from dinner so I made quesadillas for the kid's lunch.  Quesadillas are easy to make.  I spray a tortilla with no stick spray (to help it crisp) and set it in a pan.  I then top it with shredded low fat cheddar,  olives, peppers and a bit of taco meat.  Top with another tortilla (spray this one too!) and brown both sides.  Cut into wedges and serve with salsa.


To the container I set aside with 1/2 lb of cooked and seasoned ground beef  I throw in the remaining 1/2 can of kidney beans, some green pepper and leftover chopped onion and tomatoes from the taco toppings.  For tomorrow's dinner I will throw these ingredients in a pot with either tomatoes or tomato soup and make some chili.  I will serve the chili either on a baked potato, with corn bread or with my super easy microwave english muffin bread.

Healthy tips for this meal
  • Use lean meat and low fat cheese
  • Use a bit of meat and lots of veggies for a lower calorie/fat flavorful taco
  • Add brown rice and use whole grain tortillas.  It adds nutrients and fibre.
